Do you need the highest-priced matcha to bake cookies? Which grade makes sense for a matcha latte? The best answer depends less on the label and more on how aroma, color, mouthfeel and cost perform in your finished product.
Using Miboba's six-grade series—A, 2A, 3A, 4A, 5A and 6A—this guide connects each grade's sensory profile with practical beverage, dessert and culinary applications. These labels identify one supplier's range, not an internationally standardized or official grading system. Grades from different suppliers should not be compared by name alone.
Six matcha grades at a glance
Grade | Color and flavor | Best applications | Selection focus |
A | Grass to emerald green; grassy aroma, firm tea character, slight astringency | Cookies, bread, cake bases, baked goods | Tea presence and cost efficiency |
2A | Deep to bright green; fine texture, shaded-tea aroma, clean taste | Milk tea, flavored drinks, matcha coffee | Stands up to milk and sweetness |
3A | Bright green; noticeable shaded aroma, fresh and smooth | Chocolate, mousse, fine desserts | Color and delicate mouthfeel |
4A | Bright to tender green; savory seaweed-like aroma and rounded freshness | Premium lattes, iced matcha, lighter drinks | Showcases the tea's own aroma |
5A | Tender to deep green; rich savory aroma, smooth body, sweet finish | Tea preparation, wagashi, fine cuisine | Complexity and lingering finish |
6A | Bright deep green; clean, intense aroma, rich body, long finish | Fine tea service, pure matcha, haute cuisine | Full tasting experience |

From baking to tea service: six application levels

A | Everyday baking
With a stronger grassy aroma, clear tea character and a lightly astringent finish, A works well in cookies, breads and cake bases. In baked recipes dominated by butter, sugar and heat, paying for the most delicate tea aroma may bring limited benefit.
2A | Everyday mixed drinks
2A offers a clean flavor, fine texture and a shaded-tea note. It is a practical starting point for milk tea, flavored drinks and matcha coffee, where the tea needs to remain recognizable beside milk and sweetness.
3A | Fine desserts
With bright green color, a smooth texture and fresh tea character, 3A is suited to mousse, chocolate and premium desserts. Chilled or lightly processed recipes can often showcase its color and delicate notes more effectively than prolonged baking.
4A | Premium matcha beverages
A distinctive savory, seaweed-like aroma and rounded freshness make 4A worth considering for premium matcha lattes, iced matcha and drinks with restrained flavor additions. It gives the matcha itself more room to stand out.
5A | Tea preparation and fine cuisine
5A emphasizes a silky texture, rich savory aroma and pleasantly sweet finish. Use it for pure matcha preparation, wagashi and carefully balanced fine cuisine. Excessive sugar or strong added flavors may mask its nuances.
6A | Fine matcha tasting
With a clean, concentrated aroma, full body and lingering finish, 6A is best used where matcha is the central experience: tea service, direct tasting or refined culinary presentations. These qualities may be less apparent in heavily sweetened or strongly heated formulas.
Why the highest grade is not always the right grade
Baked products call for performance after heating; milk drinks need tea flavor that can hold its own against dairy and sugar; pure tea highlights astringency balance, smoothness and aftertaste. A single grade can behave very differently from one recipe to another.
Before purchasing, identify the product format, desired tea intensity, retail price target and consistency requirements. Shortlist the grades that fit, then test them in the actual recipe before making a final decision.
